Cranberry Shortbread Drops

From the kitchen of Mr. Food Test Kitchen.

Makes 3 dozen

Ingredients

  • 2 sticks butter, softened
  • ½ cup sugar
  • 1 egg yolk
  • 1 ½ teaspoons vanilla extract
  • ¼ teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup dried cranberries
  • 1 cup white chocolate chips
  • ½ cup chopped walnuts

Instructions

  1. Preheat oven to 400°F.
  2. Coat two baking sheets with cooking spray.
  3. In a large bowl, cream butter and sugar.
  4. Beat in egg yolk, vanilla and salt.
  5. Add flour; mix well.
  6. Stir in dried cranberries, white chocolate chips and walnuts.
  7. Drop by small teaspoonfuls onto baking sheets.
  8. Bake 10-12 minutes, or until lightly browned on bottom.
